OMELETTS and QUICHES are very popular in French cuisine, and they are a delicious and a very satisfying way to start the day.
I find they have the advantage of being an easy way to add protein and fiber, with portions of vegetables, at the first meal of the day since most of the time we usually start our first meal eating carbohydrates, like potatoes, crackers, bread, buñuelos, fritters, etc... Here in Colombia, we have a great variety of temptations.
I also recommend them as a very delicious and light way to end the day, as dinner. Along with a serving of soup or a salad you will have a complete meal.
The following recipes are easy to prepare, with readily available ingredients. If you are short on time in the mornings, you can keep your vegetables already cut and ready to use quickly when preparing them.
With practice, you can start to be more creative and add a variety of vegetables to your tortillas such as eggplant, zucchini, asparagus, mushrooms, salmon, turkey, etc.
A QUICHE is a kind of savory pie in a flour crust. They come filled in different ways, some with spinach, mushrooms, broccoli, or any vegetable you want to experiment with. They must have eggs, and usually have milk and cheese.
They can also be prepared without theflour rind and still taste great. For my low carb days I usually use a cauliflower crust. See this recipe in the list.
