I like to prepare this kind of tarts and pies because of the dense, low calories nutrients they possess. They are great as a snack in the middle of the day or even for breakfast. As lunch option, put it together with a salad or with a hearty vegetable soup for a complete low-carb meal.
Serves: 4-6
Ingredients
2 Tbsp olive oil
1 clove of garlic, minced
1/2 cup diced onion
½ cup chopped tomatoes
2 cups steamed kale
4 whole eggs
1/3 cup milk
1/2 cup white fresh cheese (about 4 oz.)
1/3 cup cilantro, chopped
1/2 tsp of paprika
Salt and black pepper to taste
